TCM Dietary Therapy in Brookvale: Ginger Chicken Soup Recipe.

A Ginger and Turmeric Chicken Soup is ideal for supporting Spleen Qi, as its gentle on the digestive system and helps combat tiredness and fatigue.

  • Turmeric supports the smooth flow of Qi and blood, reducing inflammation while aiding overall circulation.
  • Chicken is considered a nourishing tonic that strengthens Qi and blood, making it especially beneficial during times of fatigue or recovery. Together, these ingredients create a comforting, healing soup that aligns with the Spleen’s natural preferences and supports overall digestive harmony.

Chinese Ginger & Turmeric Chicken Soup

Ingredients:

  • 1 tablespoon olive oil or sesame oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon fresh turmeric, grated (or 1 teaspoon ground turmeric)
  • 1 tablespoon soy sauce or tamari (for gluten-free option)
  • 1 tablespoon fish sauce (optional for extra umami)
  • 6 cups chicken or vegetable broth
  • 2 cups cooked shredded chicken (use rotisserie chicken for convenience)
  • 1 cup shiitake mushrooms, sliced
  • 1 cup carrots, thinly sliced
  • 1 cup bok choy or spinach
  • 1/2 cup bamboo shoots (canned), drained and rinsed
  • 1-2 red chilli peppers, sliced (adjust to taste)
  • Juice of 1 lime
  • 1 tablespoon honey or maple syrup (optional)
  • Salt and pepper to taste
  • Fresh coriander, green onions, and lime wedges for garnish
  • 1/4 cup cooked brown rice or rice noodles (optional for added texture)

Instructions:

  1. Prepare the Aromatics:
    • Heat the olive or sesame oil in a large pot over medium heat.
    • Add the chopped onion, garlic, ginger, and turmeric, and sauté for about 2-3 minutes until fragrant and the onion is translucent.
  2. Build the Soup Base:
    • Add the soy sauce (or tamari) and fish sauce to the pot, stirring well.
    • Pour in the chicken or vegetable broth and bring to a gentle simmer.
  3. Add the Vegetables:
    • Stir in the shiitake mushrooms, carrots, and bamboo shoots.
    • Let simmer for about 10 minutes until the vegetables are tender.
  4. Add Chicken and Greens:
    • Add the cooked shredded chicken and bok choy (or spinach) to the soup.
    • Simmer for an additional 5 minutes until the greens are wilted and the chicken is heated through.
  5. Season and Adjust:
    • Stir in the sliced chilli peppers, lime juice, and honey (if using).
    • Taste and adjust the seasoning with salt and pepper as needed.
  6. Serve and Garnish:
    • Ladle the soup into bowls and optionally add cooked brown rice or rice noodles.
    • Garnish with fresh cilantro, green onions, and lime wedges.
    • Enjoy the soup warm, accompanied by extra lime wedges for squeezing if desired.
